Corn Puttu Podi Double Horse is a mix for traditional South Indian puttu in a corn version – a light, steamed "cake" with a crumbly, sandy texture, served in layers with coconut flakes. The mildly sweet taste of corn pairs wonderfully with both savory and sweet additions. The flour has been pre-processed, making preparation quick and repeatable: just moisten the mix with water and a pinch of salt to a damp crumble consistency, layer with coconut, and steam in a puttu maker or steamer. The result is fragrant, soft rolls (or portions from a mold) that break apart into delicate, fluffy grains. Serve savory with chickpea/vegetable curry, black beans, sambar, chutney, or ghee and banana; sweet – with jaggery, honey, or coconut milk.
