In Nepalese cuisine, it's the key to crispy, aromatic sel roti; in South Indian cuisine, it's used for appam, idiyappam, and thin dosas. It's excellent for gluten-free pancakes, crepes, waffles, shortcrust pastries, as well as for tempura and light frying. In baking mixes, it improves the texture of loaves and rolls, especially when combined with starch (corn, potato) and tapioca flour. As a natural thickener, it blends soups, sauces, and creams beautifully without adding any aftertaste. Tips: For pancakes, start with a ratio of about 1 cup rice flour + 1–1.5 cups water/milk (plant-based), a pinch of salt, and a tablespoon of oil; let the batter rest for 10 minutes to hydrate. For tempura, mix rice flour, cornstarch, and very cold water half and half – the breading will be ultra-light and crispy. For gluten-free bread, combine with tapioca (20–30%) and add psyllium husk/xanthan gum for elasticity. As a thickener, dilute it in a little cold water and add it at the end of cooking, stirring until smooth.
