What you can buy

Most people come to an Indian store for things a Polish supermarket does not stock, or sells only in small sachets:

  • spices in larger packs: turmeric (haldi), cumin (jeera), coriander (dhania), Kashmiri chilli, garam masala,
  • rice: basmati in big bags, and varieties for South Indian cooking,
  • flours: atta for chapati, besan (gram flour), rice flour, millet flours,
  • dal: toor, chana, moong, urad and masoor,
  • ready meals and spice mixes: for biryani, chana masala, butter chicken, sambar,
  • snacks: namkeen, papad, sweets,
  • cosmetics and household items: hair oils, soaps, incense.

The Wrocław shop has its own range, which can differ from the online shop. Phone ahead for rarer items and fresh vegetables.

Rice, spices and atta: a short starter guide

Basmati rice differs in grain length and in whether it was aged. A longer, older grain cooks up drier and more fragrant, which suits biryani and pulao. We cover this in how to choose basmati rice.

Whole spices such as cumin or coriander seeds keep their aroma longer than ground ones. If you cook Indian food once a week, buy ground spices in small packs. Keep them in airtight jars, away from the hob and from light.

For chapati and roti you need atta, a finely milled wholewheat flour. Polish wholemeal wheat flour ("mąka pszenna razowa") is milled more coarsely and gives harder flatbreads. Atta is usually sold in bags of 5 kg or more, because you use a lot of it. Store it in an airtight container in a cool, dry place.

For your first dal, start with red lentils (masoor dal). They cook fast and break down into a thick sauce on their own. Toor dal and chana dal need longer cooking, and many people soak them first.
