Dried stockfish heads are a traditional fish product made from Atlantic cod (Gadus morhua), subjected to a natural drying process without the addition of preservatives. The raw material comes from the northeastern Atlantic Ocean, from the FAO area 27, division 11a – the Norwegian Sea, where fish are caught using hooks and lines as well as encircling and gathering nets. The drying process allows for the preservation of a high protein content and the characteristic firm structure of the product, while simultaneously extending shelf life without the need for chemical preservatives. Dried stockfish heads are an ingredient in traditional Mediterranean, Italian, and African cuisine dishes, where they are used to prepare broths, soups, sauces, and one-pot meals. Before use, they require proper soaking in water to restore the appropriate texture. The product is characterized by an intense fish aroma and a high concentration of nutrients, especially protein. It contains naturally occurring fish fats and a small amount of salt. The product is intended for further culinary processing. It should be stored at a controlled temperature from 5°C to 10°C, and after opening, kept in a tightly sealed package under refrigerated conditions according to the manufacturer's recommendations. The packaging is made of PA/PE plastic and should be sorted as plastic waste according to local regulations. The product contains fish as an allergen. This is a dried product, without additives, based solely on one ingredient – dried Atlantic cod.
