Fresh ginger, known as Fresh Ginger, Ginger Root or Adrak, is the aromatic rhizome of the Zingiber officinale plant, being one of the most distinctive ingredients of Indian cuisine and many other Asian cuisines. Although the term "ginger root" is often used in trade, the edible part of the plant is botanically a rhizome developing beneath the soil surface. In India, Pakistan, Bangladesh, and other South Asian countries, fresh ginger is commonly referred to as adrak and is a basic ingredient of everyday cooking. It is characterized by an intense, spicy, slightly citrus aroma and a distinctive, warming, and pungent taste. Younger rhizomes are usually more tender and less fibrous, while more mature ginger may have a thicker skin, a stronger flavor, and a more fibrous texture. Fresh ginger can be finely chopped, sliced thinly, grated, crushed in a mortar, or blended into a paste. In Indian cuisine, it is often combined with garlic to create ginger garlic paste, which is used as an aromatic base for curries, lentil dishes, vegetables, meat, and many marinades. Adrak is also a popular ingredient in masala chai and adrak chai, where fresh pieces or crushed rhizome are boiled together with tea, milk, and spices. Ginger pairs excellently with garlic, onion, chili, cumin, coriander, turmeric, cardamom, cinnamon, and cloves. In Chinese, Thai, Vietnamese, and other Asian cuisines, it is used in stir-fry dishes, soups, broths, sauces, marinades, and dishes with fish, meat, and vegetables. Fresh ginger is also suitable as an addition to drinks, lemonades, infusions, cocktails, and desserts. It can be combined with lemon, lime, mint, honey, or fruits primarily to achieve its characteristic flavor and aroma. Before use, the rhizome should be thoroughly washed. The thin skin can be left on after careful cleaning or removed with a knife, peeler, or the edge of a spoon. Individual pieces of fresh ginger may naturally vary in shape, size, skin color, juiciness, and degree of fibrousness. Fresh ginger should not be confused with dried ground ginger – although both products come from the same plant, they differ in intensity, aromatic profile, and culinary use.
