Fresh Indian purple eggplant, also known as Purple Brinjal, Eggplant, or Baingan, is a popular vegetable used in the cuisines of India, Pakistan, Bangladesh, Nepal, and other South Asian countries. The eggplant belongs to the species Solanum melongena and comes in many varieties differing in size, shape, and skin color. The variant offered here is distinguished by its purple coloration and should be distinguished from the white Indian eggplant White Brinjal available in our assortment. The terms brinjal and baingan are commonly used in South Asia, while the English name eggplant is widely used in international markets. Compared to the large eggplants commonly found in European stores, Indian varieties can be smaller and differ in proportions, flesh texture, and number of seeds. However, the exact size and shape depend on the variety and the specific delivery batch. The flesh of fresh eggplant has a relatively mild taste and softens during heat treatment, absorbing the aromas of spices, sauces, and other dish ingredients well. This makes Purple Brinjal a very versatile ingredient in Indian cuisine. It can be fried, stewed, baked, grilled, and cooked in sauces. Eggplant is often used to prepare various types of curry and sabzi and can be combined with onion, tomatoes, garlic, ginger, chili, coriander, cumin, turmeric, mustard seeds, and masala blends. One of the most famous Indian eggplant dishes is baingan bharta, in which roasted or grilled eggplant is mashed and combined with spices and other ingredients. Smaller eggplants are also used in stuffed dishes such as bharwa baingan, and regional Indian cuisines offer many other ways to prepare them. Purple brinjal can be served with basmati rice, dal, and breads such as roti, chapati, naan, or paratha. Before preparation, the vegetable should be thoroughly washed, the stem removed, and cut according to the chosen recipe. Cut eggplant darkens relatively quickly on the surface due to natural processes occurring after cutting, which does not in itself indicate spoilage. The skin of young, firm fruits is usually used together with the flesh and does not require peeling unless the specific recipe calls for it. Due to the natural character of the fresh product, individual pieces may vary in size, shape, intensity of purple color, number of seeds, and surface appearance.
