Taiwanese Style Sliced Noodle Sau Tao is a wide, wheat noodle in Taiwanese style with a chewy texture and a distinct homemade character of scissor-cut strands. Ideal for soups and stir-fry dishes: from classic Taiwanese beef noodle soup (niu rou mian), through spicy dishes with chili paste and garlic, to creamy sesame sauces or quick vegetable stir-fries with tofu and chicken. The wide ribbons absorb broth and sauce well, remaining flexible and firm after cooking. Preparation: bring a large pot of salted water to a boil, add the noodles, and cook for 5–7 minutes (al dente or to your preferred softness), drain; for stir-fry, cook for one minute less and finish in the pan with the sauce. Tips: before serving, mix with a little sesame oil to prevent the strands from sticking; for soups, serve immediately after cooking, pouring hot broth over. It also works well in cold salads with cucumber, cilantro, and soy-vinegar dressing. Storage: in a cool, dry place, tightly sealed.
