The Sattu Flour Mix Diyo is a convenient, traditional base for drinks and dishes from the Bihar/UP region, made from roasted and finely ground grains/legumes (most often chickpeas and cereal additives), with a slightly nutty, roasted aroma and excellent solubility; ideal for an energetic sattu sharbat drink, either savory or sweet, for stuffed parathas, litti (litti–chokha), tikki, fillings, cutlets, as well as for thickening soups, sauces, and forming quick balls-laddu. How to use: for the drink, mix 2–3 tablespoons of sattu with a glass of cold water, add salt, pepper, roasted cumin, a bit of mustard oil/lemon, and mint; for the sweet version, add jaggery/honey and cardamom. For dough and fillings, combine with spices, onions, herbs, and a bit of water/ghee. The roasted products are filling and convenient for takeout – they are great for lunchboxes and during workouts. Store tightly closed in a dry, cool, and shaded place; always check the label for ingredients (gluten-containing grains may be present) and cross-allergens.
