Black Soybean Nepali Mato is carefully selected beans with a deep color and a slightly nutty flavor, valued in Nepalese and Himalayan cuisine; perfect for traditional dishes such as bhatmas sadeko (black soybean salad with chili, lime, onion, and coriander), thick soups, curries, stir-fries, pilafs, and homemade spreads and burgers. Preparation: rinse, soak for 6–10 hours (for shorter cooking time and better digestibility), cook in fresh water for 60–90 minutes until soft or shorter in a pressure cooker; add salt and acidic ingredients at the end to preserve the delicate skin. Cooked soybeans can be stored in the refrigerator for 2–3 days or frozen in portions – a great base for meal prep. The neutral flavor profile absorbs spices well (cumin, coriander, ginger, garlic, chili) and pairs with vegetables, rice, and grains. Plant-based product, naturally gluten-free, a source of protein and fiber; suitable for vegetarian and vegan diets. Rinse the soybeans and soak them overnight in water (or at least 8 hours). Pour in fresh water and boil. Cook over low heat for 60-90 minutes or until tender (add more water if needed). Season with butter or oil, salt and any spices, cook uncovered over low heat until desired consistency is obtained.
