Green mango, known as Green Mango, Raw Mango, Unripe Mango, Kaccha Aam or Kairi, is an unripe fruit of Mangifera indica valued primarily for its distinctive sour, tart, and fresh taste. Unlike ripe mango, which is usually associated with sweet, soft, and aromatic flesh, green mango is harvested at an earlier stage of ripening when the flesh remains firm, crisp, and distinctly sour. This is an intentionally used form of mango, particularly popular in the cuisines of India, Pakistan, Bangladesh, Nepal, Sri Lanka, Thailand, and other Asian countries. In India, unripe mango is often referred to as kaccha aam or kairi and is used as an ingredient in pickles, chutneys, salads, drinks, and various spicy accompaniments. Green mango can be peeled, sliced, cut into sticks or cubes, or grated, depending on the dish being prepared. Its sour taste pairs well with salt, chili, sugar, jaggery, cumin, mustard, coriander, and other spices. One of the most characteristic uses is making Indian mango pickle, or achar, from unripe mango. Hard pieces of the fruit are combined in various regional recipes with salt, oil, and blends of aromatic spices. Green mango is also a popular ingredient in chutneys, where its natural acidity can be balanced with sweet, salty, and spicy additions. In India, it is also used to prepare aam panna – a traditional drink made from cooked or roasted unripe mango, sugar or jaggery, and spices. In Southeast Asian cuisines, crunchy green mango may appear in salads and snacks, often combined with chili, lime, sugar, and other intense flavorings. Inside the fruit is a large, hard seed that must be separated from the flesh. The degree of firmness, sourness, and juiciness can vary between individual fruits. The green color of the skin is not always a sole indicator of ripeness, as appearance also depends on the variety. The offered mango is intended primarily for uses characteristic of unripe, sour fruits. If the fruit is stored for a longer time, it may gradually ripen, soften, and change its flavor profile.
