Smeraldo Milano Dried Fish Anchovies are a concentrated source of natural umami – small, whole fish dried to retain their pure, marine aroma and pleasant, slightly nutty note after roasting. A versatile ingredient in Mediterranean and Asian cuisine, it enhances broths, sauces, and risottos, as well as stir-fries, ramen/udon soups, kimchi jjigae, and vegetable stews. In Italian cuisine, it's perfect for pasta (puttanesca, anchovy aglio-olio), tomato sauces, and as a "secret" sauce for roasted vegetables. When ground, it creates a natural powdered "bouillon" for seasoning rice, scrambled eggs, or salads. How to use: Before cooking, rinse briefly and (optionally) soak for 5–10 minutes to reduce the saltiness. For broth: dry roast for 1–2 minutes, add water, and simmer for 10–15 minutes with a bay leaf, garlic, or seaweed – this will create a clear, rich broth.
