Mix Himali Daal Diyo is a Himalayan blend of legumes inspired by home cooking in Nepal – perfect for nutritious dals, soups, and one-pot curries. It contains carefully selected varieties of lentils/peas/beans that cook evenly, yielding a thick, velvety broth with a deep, nutty-earthy profile and natural umami. It works great in classic dal bhat with basmati rice or jeera rice, with vegetables, pickles, and raita; equally good for khichdi, as a base for vegetable stews or creamy soups. The high content of plant protein and fiber supports satiety and a balanced diet, while the variety of grains brings richness in texture. Preparation: rinse under running water; to shorten cooking time, soak for 4–6 hours (optional), then cook until soft (about 25–40 minutes; shorter in a pressure cooker). Classic tadka: in ghee or oil, heat cumin, mustard seeds, garlic, ginger, chili, curry leaves, and a pinch of turmeric, then combine with the cooked dal; season with salt, lime, and coriander.
