Achari Gosht Masala MDH 100g is an aromatic blend inspired by North Indian pickles (achaar), designed for tender, juicy meat in a spicy-sour sauce; classic notes of mustard, fennel, fenugreek, cumin, coriander, turmeric, and chili give the dish a character of deep spiciness with citrus freshness, perfectly cutting through the richness of lamb or beef. It works well for marinades and quick pan curries as well as for slow braising in a onion-tomato sauce; simply mix the meat with yogurt, salt, lemon juice, and 1–2 tablespoons of the blend, set aside for 30–60 minutes, and then sauté and simmer until tender. For a fuller aroma, briefly sauté the spice in oil to release the essential oils. Great also for vegetarian versions: with tofu, paneer, eggplant, or cauliflower, it allows you to achieve the achari character without a complicated list of ingredients. Store in a dry, cool place, tightly seal the package after each use; before use, check the label for allergens and the level of spiciness, which may vary between batches.
