When cooked, the grains remain separate and fluffy, making the rice an ideal base for biryani, pilafs/pulao, curry dishes, grilled meats, stir-fried vegetables, or as an elegant side for fish and vegetarian dishes. Preparation method (absorption): rinse the rice several times until the water runs clear, optionally soak for 20–30 minutes, then cook in a ratio of 1 cup of rice to 1.5–1.8 cups of water with a pinch of salt and fat (ghee or oil). Once boiling, reduce the heat, cover, and simmer for 10–12 minutes, let it sit for 5 minutes, and fluff with a fork. In a rice cooker, use the same proportions.
