Fish Fry Masala Aachi is a ready-to-use, aromatic blend for quick frying and grilling fish in a South Indian style. Balanced notes of chili, coriander, cumin, pepper, turmeric, garlic, ginger, and fenugreek create a golden, spicy coating with a distinct umami that enhances the natural sweetness of the fish and gives a crispy finish. How to use: mix 2–3 tablespoons of the masala with 1–2 tablespoons of lemon juice (or vinegar), a little water/oil, and salt to taste; rub onto fish fillets or steaks, let sit for 15–30 minutes, then fry in a pan/air fryer/grill until browned. Great for mackerel, tilapia, cod, pangasius, salmon, as well as for squid or shrimp. Serve with onion, lime, and raita or as a side with rice, chapati, and salads. Tips: for a "restaurant style" version, add a tablespoon of rice flour/rice-corn flour to the mix to enhance crispiness; adjust spiciness with the amount of masala and lemon.
