Soybeans Pashupati 

 

Soybeans- bhatmas, is popular in Nepali and Himalayan cuisine. Traditionally used to prepare fermented and unfermented dishes in the eastern Himalayan regions of Nepal, India and Bhutan. Most often used as a Nepali appetizer or eaten as a salad (salad bhatmas sadeko).

 

Basic preparation: Rinse the soybeans and soak them overnight in water (or at least 8 hours). Pour in fresh water and boil. Cook over low heat for 60-90 minutes or until tender (add more water if needed). Season with butter or oil, salt and any spices, cook uncovered over low heat until desired consistency is obtained.
