Mature vegetable banana, known as Plantain Ripe, Ripe Plantain, Cooking Banana, Plátano Maduro, or Maduro, is a variety of banana primarily used as an ingredient in hot dishes. Plantain is especially popular in the cuisines of West and Central Africa, the Caribbean, Latin America, and parts of Asia. Compared to the typical dessert banana, plantain is usually larger, firmer, and richer in starch, and its culinary use largely depends on the degree of ripeness. The offered ripe variant is characterized by greater natural sweetness and a softer pulp than the green plantain. As it ripens, the starch present in the fruit gradually converts into sugars, making the taste distinctly sweeter and the texture after heat treatment softer and creamier. The peel of a ripe plantain can be yellow, yellow-brown, have numerous dark spots, and at a very high degree of ripeness become largely brown or almost black. Such discolorations of the peel are a natural part of the ripening process and do not in themselves indicate fruit spoilage. In many traditional recipes, heavily ripe plantains with dark skin are preferred due to their more intense sweetness and softness. Ripe plantain is most often consumed after heat treatment. It can be fried, baked, grilled, boiled, or prepared in an air fryer. One of the best-known uses is maduros, which are slices of ripe plantain fried until the interior is soft and the surface caramelized. In Caribbean and Latin American cuisines, sweet plantain is served as a side dish to rice, beans, meat, fish, and other main dishes. In various regions of Africa, fried ripe plantains can be a standalone snack or an addition to spicy dishes, sauces, meat, and fish dishes. The natural sweetness of the ripe fruit contrasts well with chili, salt, spices, and flavorful sauces. Plantain can be cut into slices, diagonally into larger pieces, or lengthwise, depending on the dish being prepared. Ripe plantain should be distinguished from green plantain – both are the same type of fruit at different stages of ripeness but differ in taste, texture, and use. Green plantain is more starchy, hard, and neutral, while ripe plantain is sweeter and caramelizes more easily during frying or baking. The product should also not be confused with the common dessert banana, as plantain is traditionally used primarily as a culinary ingredient.
