Hot Mango Pickle Pravin is a classic Indian pickle made from green mangoes that combines the juicy tartness of unripe fruit with the fiery heat of chili and the deep aroma of mustard oil. Large, meaty pieces of mango are marinated with mustard, fenugreek, turmeric, garlic, and asafoetida, creating a multi-layered flavor: first, a fresh, citrusy-tart "claw," followed by the warmth of spices and a long, slightly smoky, mustardy finish. This condiment instantly enlivens simple meals – a teaspoon added to rice with dal, khichdi, or curd rice transforms them into a full, satisfying dish.
