It thickens soups and sauces excellently, and in "fusion" cuisine, it works well in homemade pasta (e.g., inspired by Japanese soba), dumplings, and blinis. Buckwheat flour combines well with other flours (wheat, rice, oat), improving the texture of baked goods and adding character – usually, 20–50% of the mixture is enough to achieve a flexible, moist dough. It is also an excellent base for meatless patties, breading, or savory granola. Store in a dry, cool place, tightly sealed; for longer freshness, you can keep it in the fridge or freeze it in portions.
