Appalam Papadam Anil are classic South Indian discs made from urad dal (black gram without husk), sun-dried and ready for quick preparation just before serving. Thin as paper, after a moment of cooking, they become spectacularly crispy and light, adding a pleasant texture to any meal. Just fry them for a few seconds in deep, well-heated oil to puff them up and give them a golden color. Alternatively, you can roast them over a flame, in a dry pan, in the oven, or briefly in the microwave – without fat, for a lighter effect.
