Little India is a brand encompassing food products primarily used in the cuisines of Asia, Africa, the Middle East, Latin America, and other regions of the world. The assortment includes, among others, rice, flours, legumes, spices, grains, and other basic culinary ingredients. The products are selected with people in mind who are looking for ingredients used both in traditional regional dishes and in everyday cooking. The Little India offer allows access to less common raw materials and products characteristic of various culinary cultures on the Polish market.
Little India White Corn Flour is a white corn flour made from white corn, serving as a versatile ingredient used in many culinary traditions around the world. Unlike the more common yellow corn flour, the product has a light, creamy-white color resulting from the variety of corn used. White corn is a particularly important raw material in the cuisines of Latin America and Africa, and products made from it are used to prepare various types of pancakes, bread, porridges, and side dishes. Corn flour can be used both on its own in recipes adapted to its properties and in combination with other types of flour. It is suitable for making pancakes, flatbreads, corn bread, crepes, baked goods, and for thickening selected dishes. It can also be used for breading vegetables, meat, or other products before frying, providing a different texture than traditional wheat flour. In African cuisines, flour or finely ground corn forms the basis of many thick dishes served as a side to sauces, vegetables, meat, and one-pot meals. Depending on the region, similar dishes are known as ugali, nshima, sadza, or pap, although their exact recipes and the required degree of corn milling may vary. The product can also be used in Latin American cuisine; however, it should be noted that regular white corn flour is not automatically the same product as masa harina, which is flour made from corn subjected to the nixtamalization process. For this reason, when preparing traditional tortillas, tamales, arepas, or other regional dishes, it is necessary to check exactly which type of flour the specific recipe calls for. Corn flour also differs from corn starch, which in Poland is sometimes referred to as potato flour in thickening applications but is a different technological product. Little India White Corn Flour is made from corn and retains the characteristics of ground grain, whereas starch is an isolated component of the grain. Corn flour naturally does not contain gluten; however, the possibility of labeling a specific product as "gluten-free" depends on production, packaging conditions, and the manufacturer's declaration regarding the risk of cross-contamination. Therefore, before using the product by people with celiac disease or severe gluten intolerance, the current packaging labeling should be checked. The product should be subjected to appropriate culinary processing according to the dish being prepared and is not intended for raw consumption.
