Momo's Masala is an aromatic blend for hot and delicious momos.
Veg Momos Recipe:
1 cup / 100g finely chopped cabbage
-2 medium / 130g finely chopped carrots
-1 large pepper (70 g), finely chopped
-2 medium / 100g finely chopped onions
-2 tbsp / 15g finely chopped garlic
-1/2 teaspoons of black pepper powder
-2 tbsp / 15g Momo's Masala
-2 teaspoons of oil
1/2 cup / 100 ml of water
For decoration: 2 tablespoons of chives, chopped.
Cake: 2 cups / 300 g refined flour, 4 tablespoons oil, 1/2 teaspoon salt, 1 1/4 cup / 200-250 ml water
Preheat 2 tablespoons of oil, add garlic, fry for a minute. Add finely chopped onion and sauté it for 2-3 minutes over medium heat.
Add the finely chopped vegetables, cabbage, pickles, paprika and fry the vegetables over medium heat for 1-2 minutes.
Add 2 tablespoons of Shana Momo's Masala salt as per taste, black pepper and mix well. Fry for 2-3 minutes over low heat or until the vegetables are well cooked. Turn off the flame and add sprinkled onions. Put that aside.
Dough: Mix refined flour, salt to taste, oil and knead to a smooth dough. Cover the dough and set aside for 15-20 minutes.
Divide the dough into 15-20 equal portions and make smooth balls. Roll up into 4 inch thin circles.
Take a round cake, slightly moisten the edges with water and put some filling in the center. Join the edges to cover the fill.
Twist to close and fill in the rest the same way. Grease the steam tray with oil and place the shaped momos on it.
Steam for 6-8 minutes or until the outer layer is shiny, transparent and not sticky to the touch. Serve hot with chili sauce.
Ingredients: Coriander, Onion, Cumin, Mustard Seeds, Kozierdaki Seeds, Rice, Salt, Turmeric, Garlic, Angil's Herb, Chilli, Fenugreek Leaves, Black Pepper, Fennel, Cassia, Nutmeg, Bay Leaves, Green Cardamom.
