Indian gooseberry, known as Amla, Indian Gooseberry, Amalaki or Aonla, is the fruit of the Phyllanthus emblica tree, widely used in India and other South Asian countries. Despite the Polish name "agrest indyjski," amla is not the same species as the European garden gooseberry. Fresh amla fruits usually have a spherical shape, smooth skin, and characteristic vertical grooves dividing the fruit's surface into segments. Their color can range from light green and greenish-yellow to more yellowish depending on the variety, ripeness, and specific batch. Amla is distinguished by a very characteristic flavor profile – it is intensely sour, astringent, and slightly bitter, and after chewing, it may leave a specific aftertaste. Such astringency is a natural feature of the fresh fruit and does not indicate its immaturity or defect. In Indian cuisine, amla is used in many ways. Fresh fruits can be cut and processed into pickles, chutneys, jams, murabbas, drinks, and other preserves. A popular product is amla murabba, which is fruit prepared in a sweet syrup that balances their naturally intense acidity. Amla can also be combined with salt, chili, and aromatic Indian spices when preparing pickles. Depending on the recipe, the fruits can be cooked, blanched, marinated, dried, or crushed. Fresh amla can also be used as a sour ingredient in homemade chutneys and drinks. Before use, the fruits should be thoroughly washed. Inside, there is a hard seed that should not be eaten; when cutting, the pulp can be separated along the natural segments surrounding the seed. Due to its decidedly sour and astringent taste, fresh amla is often used as an ingredient in dishes and preserves rather than being consumed in larger quantities on its own. The fruits also play an important role in the traditional culinary culture of India; however, in the description of a food product, their traditional use should not be equated with confirmed medicinal effects. Fresh amla may naturally vary in size, color intensity, firmness, and astringency. Minor surface discolorations or differences in appearance may result from the natural character of the fruit as well as transport and do not necessarily indicate spoilage.
