Cassava, also known as Cassava, Yuca, Cassava Root, or Mandioca, is a tropical root plant of the species Manihot esculenta, whose edible root is an important ingredient in the traditional cuisines of Latin America, the Caribbean, Africa, and many regions of Asia. The Spanish name yuca should not be confused with the ornamental plant yucca – these are different plants. The cassava root usually has an elongated shape, a thick, rough skin in shades of brown, and a light, firm, starch-rich flesh. When properly cooked, the flesh becomes soft and has a mild, neutral taste, making it well suited to both delicate and intensely seasoned dishes. Cassava can serve a similar role in a meal as potatoes, sweet potatoes, and other starchy vegetables. However, fresh root requires proper preparation and should not be eaten raw. Before cooking, both ends of the root should be removed, along with the thick outer skin and the layer beneath it; the light flesh should be thoroughly washed and cut into appropriately sized pieces. Inside the root, there may be a harder, fibrous core that can be removed before or after cooking, depending on the preparation method. Cassava is most often boiled in water until fully softened, then used as a side dish for meat, fish, vegetable dishes, sauces, and stews. Cooked pieces can also be further fried or baked to achieve a crispy surface and soft interior. Yuca is a popular ingredient in Latin American and Caribbean cuisines, where it appears in numerous regional dishes. In African cuisines, cassava is also an important component of many meals. Additionally, various starch products, flours, and tapioca are made from cassava, but the product offered here is fresh, unprocessed root and should not be confused with ready-made tapioca or cassava flour. Due to the natural nature of the product, individual roots may vary in length, diameter, shape, color, skin texture, and degree of fibrousness. After cutting, the flesh should be prepared promptly, as peeled and cut cassava may undergo quality changes faster than the whole root.
