Fresh turmeric, known as Fresh Turmeric or Fresh Turmeric Root, is the fresh rhizome of the Curcuma longa plant, widely used in the cuisines of India, Sri Lanka, and other countries of South Asia and Southeast Asia. Although it is commonly referred to as turmeric root, the edible part of the plant is botanically the rhizome. In appearance, fresh turmeric may resemble ginger – it has an irregular, branched shape and a thin brownish skin, while when cut open it is distinguished by an intense yellow or orange flesh. Its taste is distinctive, earthy, slightly bitter, spicy, and mildly peppery, and its aroma differs from the commonly known dried ground turmeric. The fresh rhizome can be used after thorough washing and, depending on preferences and the condition of the surface, peeling off the thin skin. Turmeric can then be finely chopped, grated, crushed, or blended. It is a popular ingredient in curry, dal, dishes with lentils, chickpeas, and other legumes, rice dishes, vegetables, soups, marinades, chutneys, and fresh spice pastes. It pairs well with ginger, garlic, onion, chili, cumin, coriander, mustard, pepper, and other spices characteristic of Indian cuisine. In India, fresh turmeric may be referred to as kacchi haldi or fresh haldi and is used, among other things, in regional vegetable dishes, pickles, and marinades. It can be combined with ginger and garlic when preparing an aromatic base for curry, and grated turmeric can be added directly to cooked dishes. Fresh turmeric is also used as an ingredient in homemade drinks and culinary blends, but it should not be attributed medicinal properties solely based on traditional use. Compared to ground turmeric, the fresh rhizome contains natural moisture, so both forms should not be used in identical amounts without considering the specific recipe. The intense yellow-orange pigment of turmeric easily stains hands, cutting boards, countertops, dishes, fabrics, and other surfaces. Individual rhizomes may naturally vary in size, shape, thickness, skin shade, and flesh color intensity, which is typical for a fresh agricultural product.
