Aiva's Desi Makki Atta Corn Flour is a finely ground corn flour in the traditional "desi" style – naturally golden in color, with a delicately sweet, grainy aroma, and a mild flavor. Ideal for making classic makki di roti (Punjabi corn pancakes), but also for parathas, tortillas, arepas, and gluten-free pancakes and waffles. Its structure produces a soft, elastic dough after a quick kneading with hot water; a dash of ghee/oil increases softness, and in "fusion" baked goods, it combines well with rice, jowar, or bajra flour, improving elasticity without adding gluten. It works well as a thickener for soups and sauces, a base for breading with a crisp finish, and an ingredient in sunny-yellow breads and muffins. Cornmeal is naturally gluten-free** and a source of carbohydrates and fiber—great for everyday family cooking. Store in a cool, dry place, tightly closed after each use to maintain freshness and flavor.
Note: Gluten-free individuals should check the label for any traces of gluten resulting from the packaging process.
