Japanese Ramen Sautao is elastic, wavy wheat noodles inspired by the ramen style, neutral in taste, and great at absorbing broth and sauces, allowing you to create a full bowl of comfort food in just a few minutes. Ideal for classic shoyu, miso, shio, or tonkotsu, but also works well in quick stir-fries, cold hiyashi ramen, and with fusion toppings (grilled vegetables, kimchi, tofu, chicken, bacon, shrimp). Preparation: cook in a large amount of boiling water for 3–4 minutes to the desired elasticity, drain; for ramen, rinse briefly in hot water, for stir-fry you can rinse in cold water and mix with a little oil to prevent sticking. In a bowl, combine broth + tare (e.g., soy sauce/miso), add noodles and toppings: ajitsuke egg, nori, menma, chives, corn, chili oil or sesame oil. Tips: do not overcook—the ramen should remain "al dente" and elastic; salting the water is not necessary.
