Rava Idly India Gate is a convenient mix for soft, fluffy idlis made from semolina (rava/sooji) with a subtly nutty flavor and a light, moist texture; perfect for a quick breakfast or a light meal with coconut chutney, sambar, and ghee. Preparation: mix rava with yogurt/plant-based dairy and a little water to a thick cream consistency, add salt and (optionally) tempered spices in ghee/oil such as mustard seeds, cumin, curry leaves, ginger, green chili, and chopped vegetables (carrot, peas). Let it sit for 10–15 minutes, then add a pinch of soda/ENO, gently mix and portion into molds; steam for 10–12 minutes until springy (toothpick test). Serve immediately, garnished with fresh coriander; it also works well as a base for mini-idlis for soups and lunchboxes. Vegetarian product; contains gluten (wheat/semolina).
