Jowar Millet Udhaiyam is carefully selected sorghum (jowar) grain with a mildly nutty flavor and a pleasantly fluffy texture when cooked; it works great as a daily base for Indian and fusion dishes: pilafs, salads with roasted vegetables, soups, vegetable patties, and also as a rice substitute in "buddha bowl" bowls; with jowar, you can also prepare traditional jowar roti/bhakri flatbreads and porridge for breakfast. Preparation method (grain): rinse, (optionally) soak for 30 minutes, cook in a ratio of about 1:2–2.25 (jowar:water) for 20–25 minutes until the liquid is absorbed, set aside for 5 minutes and fluff with a fork. For roti/bhakri, grind into flour and knead with warm water into a soft dough. Jowar is naturally gluten-free (in the raw material), is a source of fiber and plant protein, and pairs well with cumin, coriander, turmeric, fresh herbs, and legumes. Store in a dry, cool, and shaded place, in a tightly sealed container; always check the label for batch information and any potential cross-allergens.
