Fresh fenugreek, known as Fresh Fenugreek Leaves, Methi, Methi Leaves, or Fresh Methi, are aromatic leaves of the common fenugreek Trigonella foenum-graecum, particularly popular in Indian, Pakistani, and other South Asian cuisines. Unlike fenugreek seeds and dried leaves known as Kasuri Methi, the offered product consists of fresh green leaves and tender parts of the stems. Fresh methi has a distinctive, intense herbal aroma and a slightly bitter taste, which, after proper preparation, pairs well with vegetables, legumes, rice, Indian bread dough, and aromatic spices. Before use, fenugreek should be carefully inspected, wilted or damaged parts and thicker, tougher stem sections removed, and then the leaves thoroughly washed. In Indian cuisine, fresh methi is the basis of many popular dishes. One of the best-known uses is aloo methi, a dish combining fresh fenugreek leaves with potatoes and spices. The leaves are also used to prepare methi dal, various curries and sabzi, as well as dishes with paneer and other vegetables. Fresh fenugreek can be finely chopped and added directly to dishes being prepared, where the leaves quickly reduce in volume under heat. Methi is also a popular ingredient in Indian bread. Chopped leaves can be added to dough for methi paratha or methi thepla, giving the finished flatbreads their characteristic aroma and flavor. Fenugreek pairs well with potatoes, peas, lentils, chickpeas, onions, tomatoes, garlic, ginger, chili, cumin, coriander, and turmeric. Fresh leaves have a different character than Kasuri Methi – dried fenugreek is a more concentrated spice usually used in smaller amounts, while fresh methi can serve as the main vegetable ingredient in a dish. The natural slight bitterness is a typical feature of fresh fenugreek and does not indicate spoilage. However, the intensity of the flavor may vary depending on the plant's age and the specific batch. Due to the delicate nature of fresh leaves, the product may lose firmness relatively quickly after harvest, so it is best to use it as soon as possible.
