Fresh green eggplant, known as Green Brinjal, Green Eggplant, or Thai Eggplant, is a vegetable belonging to the group of eggplants used in South Asian and Southeast Asian cuisines. In trade, green, small eggplants may appear under various names depending on the variety, region, and supplier, so the term Thai Eggplant should primarily be treated as a popular commercial and culinary name. The offered product is distinguished by its green skin, the shade of which can vary from light green to intense green, and natural lighter discolorations or patterns characteristic of the given variety may appear on the surface. The size and shape of individual pieces can also vary – green eggplants found in Asian cuisine are often small, round, or slightly oval. The flesh is light, initially firm and crunchy, and inside there are small seeds that are a natural part of the vegetable. The taste can be mild, slightly vegetal, or gently bitter, with its intensity depending on the variety and degree of ripeness. Green eggplants are especially popular in Thai cuisine, where they are used, among others, in green and red curry. Cut in halves or quarters, they absorb the aromas of coconut milk, curry pastes, chili, lemongrass, galangal, garlic, kaffir lime leaves, and Thai basil well. A characteristic feature of young green eggplants is the ability to maintain a firmer texture even after brief heat treatment, making them suitable for dishes where the vegetable should not completely fall apart. Green Brinjal can also be used in Indian cuisine and other Asian cuisines for curry, sabzi, stewed, and fried dishes. It pairs well with onion, tomatoes, ginger, garlic, chili, cumin, coriander, turmeric, mustard, and masala blends. The vegetable can be stewed, fried, boiled, grilled, or baked.
