Preparation: rinse under running water; to shorten cooking time, soak for 4–6 hours (optional), then cook until soft (about 25–40 minutes; shorter in a pressure cooker). Classic tadka: in ghee or oil, heat cumin, mustard seeds, garlic, ginger, chili, curry leaves, and a pinch of turmeric, then combine with the cooked dal; season with salt, lime, and coriander.
