An ordinary banana, unlike a dessert banana, contains more starch and less sugar. Green bananas ordinary can be eaten only after heat treatment. Yellow bananas ordinary are more ripe. During the ripening process, some of the starch turns into sugar, making it sweeter than the greens. A well-ripe banana ordinary can also be eaten raw.
