How to prepare:

  1. At the very beginning it is necessary to cook the bitter melon in a pressure cooker. You can also steam it.
  2. Put the bitter melon in the pressure cooker and add 2-3 tablespoons of water, some salt, turmeric and mix. Cover the pressure cooker and cook until the first whistle. Turn off the fire and relieve pressure in the pot by placing it under a stream of cold water.
  3. Heat 2 tablespoons of oil in a heavy-bottomed pan. Add the onion, ginger, garlic and fry over low heat until the onion is translucent.
  4. Add the tomatoes and the rest of the spices along with the salt and chili powder. Fry while stirring until the tomatoes are almost cooked. Add Bitter Melon. Check that the amount of salt and the sharpness of the food match and add salt or chili as needed.
  5. Cover the pan and simmer for about 10 minutes until the Karela is tender. Finally, add the chopped coriander leaves.
