Jaggery powder Angel
Jaggery is unrefined sugar from sugar cane juice (or less often from palm trees). It is popular in the Indian Subcontinent, Southeast Asia and Africa. Jaggery contains more nutrients than refined sugar due to its high molasses content. It has a brown color and a caramel, malt flavor.
About 70% of the world's production of jaggery takes place in India, where it is commonly called "gur".
It is most often made from sugar cane, but in a few countries it is made from the date palm.
In India, it is often used to prepare traditional desserts and sweets (e.g. sakkarai pongal, peanut chikki) or used to sweeten tea (chai).
