Guar Beans
This bean is most often eaten in curry, steamed or boiled or prepared as French fries. Compared to our traditional green beans, guar beans are smaller and flatter. It is also more bitter. This flavor is softened by adding coconut, tamarind or jaggara chips (unrefined sugar) during cooking. Guar seeds are dried and then grated. In this way, guar gum is formed. This flour is used as a thickening agent instead of gelatin.
